    The Coffee

    The Coffee

    Blue Batak is a pretty unique coffee, considering farming, coffee varietals and the profile itself.

    This particular lot is somewhat unusual, and not exactly what you might expect from this origin. Whilst it has a predictably heavy / viscous body, it also offers a distinct sweet cola bottle note, supported by a maple syrup sweetness and a rich strawberry layer.

    Go a little deeper, and you will find quite abstract florals with a sweet tobacco mouthfeel.

    It's consists of three different varietals only found in Sumatra.

    Ateng (Pronounced 'A-ceh Teng-ah'):

    This is considered the most common and locally referred to as the 'super varietal'. The Indonesia Coffee and Cocoa Research Institute (ICCRI) introduced a semi-dwarf varietal in the mid-90’s called Sigarar Utang, which was a dwarf varietal. The story goes that Ateng got it's name because of a famous dwarf comedian called Ateng which drew parallels with the dwarf size of the plant.

    The Producers

    The Producers

    Blue Batak is sourced from Lintong (officially Lintong Nihuta), at the southern tip of Lake Toba in North Sumatra. For centuries, the indigenous Batak tribe has cultivated coffee in this highly volcanic area, settled here since the 13th century.

    The region boasts fertile soils and diverse microclimates formed by its valleys. An ancient super-volcanic eruption around 70,000 years ago shaped the landscape, leaving behind numerous lakes and incredibly fertile grounds.

    The soil is so rich that locals say, "You can plant a chair and harvest a table." Most farms are small, emphasising self-sufficiency, with farmers cultivating over 10 different crops on their modest plots.

    The farming techniques carried out here are very unique and manual. From cultivation to drying, everything is done by hand and processed according to the local wet-hulled tradition known as Giling Basah.

    Farmers pick ripe cherries at sunrise, then manually pulp them before fermenting the wet parchment in bags overnight. After spreading the parchment on patios to dry, it turns into a deep blue-green colour and is later hulled when dry enough. Following additional drying for two to three days, the coffee undergoes triple-handpicking and packing, resulting in a unique cup profile.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
