    The Profile

    The Profile

    This coffee falls into the "Diima" flavour profile, which means "red" in the Oromiffa language, and indicates that you will find intensity, fruit and floral notes.

    The cherries are dried in a relatively thin layer at about 3-4 cm during the first days. The producers build up the layers to 6-10 cm after a few days. The coffees are moved frequently and are covered during the hottest hours of the day to protect the cherries from intense sunlight.

    They are covered again at night for protection against humidity. This also helps improve quality as the coffee can rest and the drying is more homogeneous. Drying naturals at these altitudes can take up to 20 days.

    We found this coffee to have a really interesting acidity alongside the tropical sweetness you would expect. It's super smooth to drink as an espresso, and opens up beautifully as a long black.

    The Producers

    The Mandoyea Washing Station is located in the heart of Nensebo Woreda with a total of 572 farmers delivering red cherries from Mandoyea.

    Located in Oromia, about 400 km south of Addis Ababa, the Nensebo Woreda is home to a collection of smallholder farmers totalling 5,000 hectares of coffee.

    The average farm size in Nensebo is two hectares and producers cultivate a range of heirloom coffee varieties, including wild varietals originating from the neighbouring forest of Bale Mountain. Coffee cherries are harvested by family members, then hand-sorted to remove unripe and overripe cherries before they are delivered to the washing station for processing.

    This is another coffee brought to us by Nordic Approach who visit Addis several times a year where they plan the season with their suppliers and develop relationships and a mutual understanding on priorities to bring us the very best Ethiopian coffee.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
